PREPARATION TIME 90 MINUTES

INGREDIENTS

  1. 500g Giant Beans
  2. 150g country sausage, sliced
  3. 2 garlic cloves
  4. 300g yogurt
  5. 1 cinnamon stick
  6. 1 sprig of fresh rosemary, only the leaves
  7. ½ tsp dried thyme
  8. 1 large orange juice
  9. 1 cup olive oil
  10. Salt
  11. Pepper

INSTRUCTIONS

  1. Place the giant beans in a bowl with plenty of water and let them soak for 8 hours or overnight.
  2. After the soaking time, put the beans in a pot with plenty of salted water and bring to a boil, removing any foam that forms on the surface. After 20 minutes, drain the beans and discard the water. Put the beans back in the pot, add enough water to cover them, and continue boiling for about 40 minutes or until fully softened.
  3. In a pan, heat 3 tablespoons of the measured olive oil and sauté the garlic, cinnamon, rosemary, and thyme for 2-3 minutes. Add the sausage and continue sautéing for 2 more minutes.
  4. Preheat the oven to 180°C (350°F).
  5. Once the beans are boiled, drain them and rinse with cold water. Place them in a baking dish and add the sautéed ingredients (remove the cinnamon stick), along with the yogurt. In a bowl, mix the remaining olive oil, orange juice, and some salt and pepper, then add them to the dish. Add a cup of water and bake in the oven for 30-40 minutes. Serve warm or at room temperature.
