INGREDIENTS
- 500g package of beans (barbounia)
- 3/4 cup olive oil
- 1 cup tomato paste
- 3 cups water (for pot cooking) or 1 1/2 cups water (for pressure cooker) or 2 cups water (for oven baking)
- Salt, pepper
INSTRUCTIONS
- In a pot: Heat 1 cup of water with a pinch of salt on high heat. Once boiling, add the beans. Boil for 6-7 minutes. Add the grated tomato, olive oil, and the remaining water, then stir. Once the beans start boiling, cover the pot, reduce the heat to medium-low, and simmer for about 50-55 minutes until the liquids evaporate. Add salt and pepper to taste and serve.
- In a pressure cooker: Follow the same steps as for the pot, but use half the amount of water (1 1/2 cups). Seal the pressure cooker, and once the valve rises, reduce the heat to medium-low and cook for about 10 minutes.
- In the oven: Pour the beans into a baking dish. Add the grated tomato, olive oil, salt, pepper, and water, then mix well. Bake in a preheated oven at 220°C (fan mode) for about 80 minutes.
