PREPARATION TIME 60’

INGREDIENTS

  1. 500g Green Beans
  2. 1 large onion
  3. 1/2 cup olive oil
  4. 2 tsp coriander
  5. 2 tsp turmeric
  6. 2 tsp ground cumin
  7. Juice of 2-3 lemons
  8. Salt, pepper

INSTRUCTIONS

  1. Rinse and drain the beans.
  2. Slice the onion into thin rings. Combine the beans in a large pot and add about 2 liters of water.
  3. Add the spices and simmer over medium heat for about 40 minutes. Toward the end of cooking, add the lemon juice, salt, and pepper, and cook for another 5-10 minutes.
  4. Finally, add the olive oil and bring to a boil. Serve with extra lemon, oregano, and a drizzle of raw olive oil on each plate.
