Ingredients

  1. 4 tbsp olive oil
  2. 2 fresh onions, chopped
  3. 200g mushrooms
  4. 1/4 cup dry white wine
  5. 3 cups parboiled hilopites pasta
  6. 1 cup chicken or meat broth
  7. 100g Roquefort cheese
  8. Salt
  9. Pepper
  10. Some fresh parsley, chopped

Instructions

  1. Heat the olive oil in a pot and sauté the fresh onions for 1-2 minutes.
  2. Add the mushrooms and continue sautéing for 2-3 minutes.
  3. Deglaze with the wine and add the Roquefort cheese to the parboiled hilopites and the broth.
  4. Season with salt and pepper carefully, and let the sauce thicken over high heat for 2-3 minutes.
  5. Serve immediately.
