Ingredients
- 4 tbsp olive oil
- 2 fresh onions, chopped
- 200g mushrooms
- 1/4 cup dry white wine
- 3 cups parboiled hilopites pasta
- 1 cup chicken or meat broth
- 100g Roquefort cheese
- Salt
- Pepper
- Some fresh parsley, chopped
Instructions
- Heat the olive oil in a pot and sauté the fresh onions for 1-2 minutes.
- Add the mushrooms and continue sautéing for 2-3 minutes.
- Deglaze with the wine and add the Roquefort cheese to the parboiled hilopites and the broth.
- Season with salt and pepper carefully, and let the sauce thicken over high heat for 2-3 minutes.
- Serve immediately.
