INGREDIENTS
- 500 g peas
- 2 zucchinis
- 1 finely chopped onion
- 2 finely chopped carrots
- 1 tablespoon finely chopped celery
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- 4 cups water
- Fresh thyme
- Salt, pepper
INSTRUCTIONS
- In a pot with 4 cups of water, boil the peas along with the onion, zucchinis, carrots, and celery. Let them simmer until softened.
Five minutes before the cooking is finished, add the olive oil, vinegar, thyme, salt, and pepper. - Remove the soup from heat, blend it, and let it cool. If it’s too thick, dilute it with a bit of water.
- Refrigerate the soup and serve it cold.
