PREPARATION TIME 60’
INGREDIENTS
- 250 grams red beans
- 1 medium dry onion
- 2-3 fresh spring onions
- 1 tomato
- 1 green bell pepper
- 1 red bell pepper
- 4 pickled cucumbers
- A bit of parsley
- Oregano
- Salt
- Pepper
- 1/4 cup olive oil
- Juice from 1/2 lemon
INSTRUCTIONS
- Optional: Soak the beans overnight in a pot with enough water to cover them.
- The next day, discard the water, add fresh water, and boil the beans until softened. Let them cool afterward.
- In a salad bowl, finely chop the spring onions, tomato, peppers, pickled cucumbers, and slice the dry onion into rings. Add the beans and finely chopped parsley. Season with salt, pepper, oregano, and any other herbs you like.
- Finally, add the olive oil and lemon juice mixture and let it marinate for a while before serving.
