INGREDIENTS

  • 600 g brown rice Tyroleza with chickpeas, raisins, and peas
  • 2 tbsp olive oil
  • 500 g cleaned shrimp
  • Salt
  • Pepper
  • ½ leek
  • ½ red bell pepper
  • 1 zucchini
  • 10 g ginger
  • 1 garlic clove
  • 5 tbsp balsamic vinegar with honey
  • 80 g soy sauce
  • 2 fresh spring onions
  • ½ bunch fresh cilantro

FOR SERVING

  • Fresh cilantro
  • Fresh spring onion

INSTRUCTIONS

  1. Place the rice in a bowl with water and let it soak for as long as possible.
  2. Add the rice to a pot of boiling water. Add salt and cook for 20 minutes.
  3. Place a deep pan on the stove.
  4. Using a knife, slice the green part of the leek into rings and add to the pan.
  5. Add the chopped red bell pepper, chopped orange bell pepper, chopped zucchini, grated ginger, and chopped garlic to the pan.
  6. For the cleaned shrimp, add olive oil, pepper, salt, mix, and cook them in the pan for 1-2 minutes until they turn golden brown on both sides. Transfer to a bowl.
  7. Deglaze with balsamic vinegar with honey and add the soy sauce.
  8. Drain the rice, transfer it to the pan with the vegetables, and add the shrimp, chopped green part of the spring onions, and chopped cilantro.

Remove from heat and serve with freshly chopped cilantro and spring onions.
