Ingredients

  1. 500g Stifado pasta
  2. 150g fresh spinach
  3. 2 chicken fillets
  4. 150g bacon
  5. 1 clove garlic, finely chopped
  6. 300ml heavy cream
  7. Grated parmesan cheese
  8. Olive oil
  9. Salt and pepper

Instructions

  • Bring a pot of water to a boil over high heat. Once boiling, add salt and the stifado pasta and cook. After it’s cooked, drain and set aside.
  • In a deep non-stick pan, add a small amount of olive oil and fry the bacon slices. Once the bacon changes color, add the chicken fillets cut into small, uniform pieces. Sauté the chicken until golden brown, then remove the chicken and bacon from the pan. Add the spinach, chopped garlic, salt, and pepper. Once the spinach softens, add the chicken and bacon back into the pan. Let them cook together for 2 minutes. Add the heavy cream and reduce the heat to medium. Once the sauce starts to boil and thicken, remove from heat and stir in the cooked pasta and parmesan cheese.
  • Serve the stifado pasta hot.
