Ingredients

  1. 1 cup sweet Trahanas
  2. 5 cups water
  3. 1 heaping spoonful tomato paste (or 1 cup chopped tomatoes)
  4. 2 tbsp olive oil
  5. Salt
  6. Pepper
  7. Crumbled feta cheese or strained yogurt

Instructions

  1. Place the water in a pot and add all ingredients, except for the cheese.
  2. Stir and cook over medium heat for 13-15 minutes (depending on how soft you prefer the Trahanas).
  3. Season with salt and pepper, then serve the Trahanas with crumbled feta or a spoonful of strained yogurt. Sprinkle with fresh ground pepper.
  4. Do not cook the Trahanas on high heat and make sure there is always enough water
  5. If there is not enough water and it sits for 5 minutes in the pot, it will absorb it all.
  6. Serve the tomato-flavored Trahanas in deep plates with crumbled feta, or stir in strained yogurt for a creamier texture.
