Ingredients

  1. 250g Vegetable Trahanas
  2. 200g Mushrooms
  3. 2 Carrots (grated)
  4. 1 Celery stalk (chopped)
  5. 1 Onion (chopped)
  6. 1 teaspoon Garlic (chopped)
  7. 1 cup Rosé wine
  8. 4 tbsp olive oil
  9. 1 teaspoon Chili powder
  10. Salt, pepper
  11. 1 vegetable broth

Instructions

  1. Heat a pot and add the olive oil.
  2. Add the onion, garlic, and celery. Stir and continue with the carrot and mushrooms. Finally, add the Trahanas to sauté all the ingredients together.
  3. Add salt, pepper, and chili. “Deglaze” with the wine and stir until the alcohol evaporates.
  4. Once the wine has mostly absorbed, add the vegetable broth and stir while lowering the heat.
  5. Cover and simmer for another 15-20 minutes.
  6. Serve the soup hot.
