Ingredients
- 250g Vegetable Trahanas
- 200g Mushrooms
- 2 Carrots (grated)
- 1 Celery stalk (chopped)
- 1 Onion (chopped)
- 1 teaspoon Garlic (chopped)
- 1 cup Rosé wine
- 4 tbsp olive oil
- 1 teaspoon Chili powder
- Salt, pepper
- 1 vegetable broth
Instructions
- Heat a pot and add the olive oil.
- Add the onion, garlic, and celery. Stir and continue with the carrot and mushrooms. Finally, add the Trahanas to sauté all the ingredients together.
- Add salt, pepper, and chili. “Deglaze” with the wine and stir until the alcohol evaporates.
- Once the wine has mostly absorbed, add the vegetable broth and stir while lowering the heat.
- Cover and simmer for another 15-20 minutes.
- Serve the soup hot.
