INGREDIENTS
- 1/2 pack of Red Lentils Tyroleza
- Onion, peeled and cut into quarters
- Carrots, peeled and halved
- Tomato, peeled and quartered
- 2 tbsp extra virgin olive oil
- Salt and freshly ground black pepper
INSTRUCTIONS
- Place the red lentils in a pot, boil them for 5 minutes, drain, and return them to the pot with just enough water to cover them.
- Add the onion, carrot, tomato, and seasoning. Once it starts boiling, reduce the heat to medium and simmer for 30 minutes, stirring occasionally to prevent sticking.
- The lentils will begin to dissolve, but that’s fine as they will be processed later.
- After 30 minutes, process the lentils using a food mill or a soup blender. If you don’t have either, you can use a multi-processor or a regular blender to make the soup velvety.
- Return the now homogenized mixture to the pot, add the olive oil, bring it to a boil, then remove from heat and serve.
