PREPARATION TIME 30 MINUTES

INGREDIENTS

  1. 1/2 pack of Red Lentils Tyroleza
  2. Onion, peeled and cut into quarters
  3. Carrots, peeled and halved
  4. Tomato, peeled and quartered
  5. 2 tbsp extra virgin olive oil
  6. Salt and freshly ground black pepper

INSTRUCTIONS

  1. Place the red lentils in a pot, boil them for 5 minutes, drain, and return them to the pot with just enough water to cover them.
  2. Add the onion, carrot, tomato, and seasoning. Once it starts boiling, reduce the heat to medium and simmer for 30 minutes, stirring occasionally to prevent sticking.
  3. The lentils will begin to dissolve, but that’s fine as they will be processed later.
  4. After 30 minutes, process the lentils using a food mill or a soup blender. If you don’t have either, you can use a multi-processor or a regular blender to make the soup velvety.
  5. Return the now homogenized mixture to the pot, add the olive oil, bring it to a boil, then remove from heat and serve.
