Description

Arborio Rice

Arborio is a white, short-grain rice cultivated in the Piedmont and Lombardy regions of Northern Italy. It has a pearly, round, plump grain that forms the foundation for risotto. What makes it unique is its higher-than-normal amount of soluble starch, which is released during cooking.
